A traditional Greek food that gives us the feeling of autumn. The combination of graviera lamb, fresh lemon herbs and grape leaves can meet and equal haute cuisine.
Ingredients: deboned and opened lamb, vine leaves. salt, pepper, oregano, gruyere cut into sticks. lemon juice and zest
Cooking method: In a preheated oven at 150 to 160 degrees, place the pan with the wrapped vine-grower lamb, pouring the white wine over the pan. We cover our pan with aluminum foil and bake for about 1:30 hours. Then uncover the pan from the aluminum foil and bake for another 10 minutes until some of the wine evaporates. We take our pan out of the oven, leave the lamb for 45 minutes to let the temperature drop a bit and unwrap the parchment paper. Cut the vineyard lamb into portions and enjoy.
