Greek Veal Ossobuco is a traditional cut of the veal shank , cut crosswise to retain the bone with the marrow in the center . This cut is rich in collagen and a deep beefy flavor , which when slow cooked turns into a honeyed texture and rich sauce .
It is ideal for a casserole, casserole dish or oven , and is the basis for the famous Italian dish Osso Buco alla Milanese , as well as for excellent Greek stews.

🔥 Cooking Method (Casserole – Classic Osso Buco)

1️⃣ Dry the meat well and season with salt and pepper.
2️⃣ Fry in a hot pan with olive oil until it turns brown.
3️⃣ Add onion, carrot, celery and garlic.
4️⃣ Deglaze with white wine and add tomato or broth.
5️⃣ Simmer with a lid on for 2–2.5 hours until tender.

✅ Ready when the meat easily detaches from the bone.


🔥 Oven / Casserole

• Bake covered at 170–180°C for 2–2.5 hours with broth and vegetables.
• Leave uncovered for 10–15 minutes at the end to allow the sauce to thicken.


💡 Chef's Tip

• Lightly tie the piece with cooking twine so that it holds its shape during cooking.
• Serve with gremolata (lemon, parsley and garlic) for an authentic Italian flavor.
