Casserole (red / lemon)
1️⃣ Heat the lard in a saucepan with a little olive oil.
2️⃣ Add onion/garlic and deglaze with wine or water.
3️⃣ Add tomato or lemon (depending on the recipe) and herbs.
4️⃣ Simmer for 90–150 minutes , until the sauce softens and thickens.
Oven (cooked in a baking pan)
• Bake at 170–180°C until tender, with liquid in the pan to prevent it from drying out.
