2️⃣ Wipe well and salt.
3️⃣ Hot cast iron: 2–3 minutes per side for a strong crust.
4️⃣ Transfer to a 180°C oven for 4–9 minutes (depending on thickness).
5️⃣ Rest 6–8 minutes before cutting.
