🔥 Cooking Method (ideal: cast iron + oven)

1️⃣ Remove the steak from the refrigerator 30–45 minutes before grilling.
2️⃣ Wipe well and salt.
3️⃣ Hot cast iron: 2–3 minutes per side for a strong crust.
4️⃣ Transfer to a 180°C oven for 5–10 minutes (depending on thickness and degree of doneness).
5️⃣ Rest 8–10 minutes before cutting.

✅ Indicative temperatures in the center (after rest):
Medium-rare: 52–54°C
Medium: 57–60°C
Medium-well: 63–66°C
Well done: 70°C+

• Cut the fillet and striploin separately when serving.
