In the beautiful vineyards of the Alpha Estate in Amyntaio, the winters are cold and difficult and the summers mild and cool. Varietal Composition: Sauvignon Blanc 100%
Area: "Paidia" & "Alfeta" wine-growing zone of Amyntaio.
Vineyard: Linear Owned vineyard of 650 acres at an altitude of 620-710 m.
Soil: Sandy - loamy with excellent drainage.
Climate: Fairly cool year without particularly high temperatures and low rainfall that is at normal levels for the region. Sufficiently long biological ripening cycle for the vine.
Yield: 680 kg/ha
Vinification: Pre-fermentative extraction in a controlled environment, alcoholic fermentation at a controlled temperature, wine remaining for 3 months on its lees with periodic stirring.
Organoleptic characteristics: Crystalline and bright with a pale yellow color, with greenish highlights. Intense and rich nose, typical of the variety, with aromas of citrus, passion fruit, lychee and a sweet hint of melon. In the mouth it is quite full, smooth, fatty, with excellent balance, freshness and finesse. Lively aftertaste that contributes to the long-lasting aromas.
Taste harmony: Cool (12 ºC), drink alone or as an aperitif. Excellent accompaniment to salads (Roquefort lettuce, tomato salad, ham and gouda), pasta with white sauce and broccoli-asparagus, shellfish, seafood, white meats with aromatics (rosemary, thyme, oregano), chicken with spinach, soft goat cheeses, caseri, sweet manouri, some desserts (lemon tart, apple pie, sorbet), fresh fruit and especially melon.
