A red from Xinomavro of the 'new school', which cannot but impress. For a few years now, Apostolos Thymiopoulos, a young man, has been making his own revolution in Naoussa. Devoted to Xinomavro, he introduces a new philosophy in the expression of the variety in Naoussa, giving it a refined and cosmopolitan character, without, however, renouncing the typicality of the variety and the region. Winemaking for the Thymiopoulos family begins in 2000, applying different cultivation tactics depending on the microclimate and the year and corresponding experimental vinifications, in order to establish the potential of each vine and the way they should be treated. In 2004, bottled wine from the privately owned winery was released for the first time. Aging takes place in oak barrels in the winery's underground cellar, while the fresh wine is left for nearly 10 months with the lees.
