Hull

1️⃣ Preheat the oven to 200°C .
2️⃣ Place the shank in the pot along with its sauce/liquid.
3️⃣ Bake covered at 200°C for 2.5 hours .
4️⃣ Remove the lid and continue baking for 30 minutes , until the pastry is crispy and golden brown.

✅ For food safety, target internal temperature ≥ 75°C at the thickest point.


💡 Chef Tips

• For a thicker sauce, let the cooking liquids boil for 2–3 minutes in a saucepan to thicken.
• For extra flavor, add a little orange zest to the serving.
• Let the meat rest for 10 minutes before cutting it for better juiciness.
