It comes from traditional slow-growing breeds (red feathers, yellow skin) and is raised at an altitude of approximately 600 meters , in poultry farms with access to outdoor space .
It is fed corn-based feed (70%) , grows slowly and naturally and is slaughtered around day 60 , according to strict European regulations and AGROCERT certifications. The result is tender, juicy meat , with a rich, authentic chicken flavor – as we remember it “from the old days”.

🔥 Cooking Instructions (indicative)
❗ The product is not ready to eat — full cooking is required before serving.
Baked in the oven
1️⃣ Preheat the oven to 180–190°C .
2️⃣ Place the chicken in a baking dish with potatoes or vegetables (carrot, onion, peppers).
3️⃣ Season with salt and pepper, add olive oil, lemon, oregano, thyme or rosemary .
4️⃣ Bake for approximately 60–80 minutes (depending on weight) until:
• the juices should come out clear,
• there should be no pink color near the bone.
5️⃣ If needed, add a little water or broth to the pan during baking.
6️⃣ Let it rest for 10–15 minutes before cutting it.
For casserole / soup / lemonade
• Cut into portions, sauté lightly (optional) and add water or vegetable broth.
• Simmer until tender – free-range chicken yields a rich, full-bodied broth.

To bring out the flavor of free-range, keep the recipe simple & Mediterranean : good olive oil, lemon, salt, pepper, oregano/thyme.
