🔥 Cooking Method
Casserole (wine / stew)
1️⃣ Lightly sauté the pieces to "lock in" the juices.
2️⃣ Add onion/garlic and deglaze with wine or a little vinegar.
3️⃣ Simmer for 60–90 minutes until tender and the sauce thickens.
Oven / Casserole
1️⃣ Preheat to 170–180°C .
2️⃣ Place in a baking dish/pan with wine, olive oil, garlic and herbs.
3️⃣ Bake for 75–110 minutes , until soft and fully cooked.
✅ For food safety, target internal temperature ≥ 75°C .
