🐇🇬🇷 Cretan Rabbit

Cretan Rabbit • Lean & Flavorful • Traditional Greek Cooking • Oven / Pot Friendly

Cretan Rabbit is a special choice for those who love traditional Greek cuisine and want meat with a clean flavor , delicate delicacy and a “lighter” profile. With a Cretan identity and character that blends ideally with rosemary, thyme, bay leaf, garlic, wine and vinegar , it becomes unique in classic recipes such as stew , wine sauce , lemon sauce or oven roast.

It is a meat that "rewards" proper cooking: when braised or simmered, it becomes tender and aromatic, with a tangy sauce and a dish reminiscent of a village tavern — but with a quality worthy of a special table.

🔥 Cooking Method

Casserole (wine / stew)

1️⃣ Lightly sauté the pieces to "lock in" the juices.
2️⃣ Add onion/garlic and deglaze with wine or a little vinegar.
3️⃣ Simmer for 60–90 minutes until tender and the sauce thickens.

Oven / Casserole

1️⃣ Preheat to 170–180°C .
2️⃣ Place in a baking dish/pan with wine, olive oil, garlic and herbs.
3️⃣ Bake for 75–110 minutes , until soft and fully cooked.

💡 Chef Tips

• Rabbit loves slow cooking : low and slow for a tender result.
• A little vinegar or wine “lifts” the flavor and gives it a more traditional character.
• Let stand 5–10 minutes before serving for a thicker sauce.

🍽️ Combinations & Serving

Side dishes: baked potatoes, pilaf rice, noodles, barley, village cheese.
Wine: dry white or light red, depending on the recipe.

🧼 Safety & Handling

• Keep in the refrigerator until cooking.
