The Bone-in Leg of Free-Range Greek Black Pork is a piece with intensity, depth and real character. The black pork stands out for its full, “old-cut” flavor and the right amount of fat that becomes velvety when slow-roasted, keeping the meat juicy. 🔥 Cooking Method (recommended – oven/grill)

Slow cooking for tenderness + strong finish for crust

1️⃣ Preheat the oven to 160–170°C .
2️⃣ Season with salt and pepper and brush with olive oil . Optional: mustard , garlic, rosemary.
3️⃣ Place in a baking pan/dish with ½–1 glass of water or wine/broth .
4️⃣ Bake, covered, for 2.5–4 hours (depending on weight), until tender.
5️⃣ Uncover and increase to 210–220°C for 15–25 minutes for nice browning.
6️⃣ Let it “rest” for 10–15 minutes before cutting it.

✅ Ready when the meat flakes easily and the juices run clear.


💡 Chef's Tip

• For a more "tight" result, bake the first part covered and at the end, use a high temperature for a crust.
• Add potatoes or quinces to the pan — they go incredibly well with the flavor of black pork.
