🔥 Cooking Method
Casserole (red/wine)
1️⃣ Brown the thighs over medium to high heat.
2️⃣ Sauté onion/garlic, add tomato/pulp and spices.
3️⃣ Simmer with a lid on for 60–90 minutes until the meat is tender and the sauce has thickened.
Oven (baking pan/dish)
1️⃣ Preheat to 170–180°C .
2️⃣ Bake covered for 70–90 minutes (depending on size).
3️⃣ Uncover for 10–15 minutes for nice browning.
✅ Ready when the juices run clear and it is fully cooked close to the bone.

• The rooster "writes" with slow cooking . Give it time and it will reward you in flavor.
