🔥 Cooking Method (ideal: pan + oven)
1️⃣ Leave the steak out of the refrigerator for 20–30 minutes .
2️⃣ Season with salt and pepper and drizzle with a little olive oil (optional: mustard/garlic/thyme).
3️⃣ In a hot pan: 2–3 minutes per side for crust.
4️⃣ Finish in the oven at 180°C for 12–20 minutes (depending on thickness).
5️⃣ Rest 5 minutes before cutting.
