The red pepper first arrived in Spain in the 16th century by Columbus after his great voyage to the Americas. Peppers have been cultivated in North America and Central Mexico for centuries, but the Spanish were the first to dry and grind these red fruits to make the spice we know today as paprika. Sweet paprika comes from mild and sweet varieties of Capsicum annuum.
Sweet paprika is a spice used around the world to add color and flavor to various recipes. Especially in the Balkan countries, paprika is used to add red color to soups, sauces and marinades.
Sweet paprika is a great spice to add at the end of the recipe, as overheating during cooking makes it bitter. It can be used in chicken, pork and beef recipes, as well as grilled and baked vegetable and potato dishes. Sweet paprika adds a sophisticated, earthy flavor to rice recipes, omelets, soups and tomato sauces. It can also be added to mince for sausages and burgers during kneading.
Sweet paprika is suitable for yogurt dips and salad dressings. It can also be sprinkled over white cheese, like feta cheese for example.
