It comes from Wagyu F1 animals – approximately 50% purebred Wagyu and 50% Angus/Hereford – with 7+ marbling, bright red meat and a characteristic fatty cap that melts when cooked, embracing the flesh with flavor and juiciness.

🔥 Baking Instructions
❗ The product is not ready to eat — it requires full cooking before serving.
Grill / BBQ (whole Picanha)
1️⃣ Remove the Picanha from the refrigerator and let it come to room temperature for 20–30 minutes .
2️⃣ If necessary, lightly score the fatty cap into diagonal "squares" without reaching the meat.
3️⃣ Season generously with salt and pepper (ideally only coarse salt & freshly ground pepper , to bring out the flavor of the meat).
4️⃣ Grill first on the fat side over medium to high heat , so that it gradually melts and caramelizes.
5️⃣ Then, grill on the meat side:
• Usually 10–15 minutes total (depending on thickness & temperature), until medium-rare / medium on the inside.
6️⃣ Let the Picanha rest for 10–15 minutes, lightly covered.
7️⃣ Cut across the grain into thin slices – this is the secret to tenderness.
In steaks (Picanha slices)
• Cut the Picanha into thick steaks and grill or pan-fry like a classic steak (2–3 minutes per side for medium-rare, depending on thickness).
💡 Chef's Tip:
Serve the Picanha slices on a cutting board, with the greasy lid "shining" and topped with just flakes of salt & freshly ground pepper . A squeeze of lemon or lime at the end gives the perfect balance.
