Sodium Bicarbonate, referred to as <<soda>> is mainly used in cooking (baking), as a leavening agent. It reacts with acidic ingredients in batters, releasing carbon dioxide, which causes the batter to expand and forms the characteristic texture and cereal in pancakes, cakes, quick breads, soda bread, and other baked goods and fried foods.
