🔥 Cooking Method (classic Tash Kebab)
1️⃣ Lightly dry the meat and brown it over high heat.
2️⃣ Add onion and sauté until translucent.
3️⃣ Optionally, deglaze with wine or a little water/broth.
4️⃣ Add tomato/tomato paste and spices (allspice, bay leaf, cumin, pepper).
5️⃣ Simmer with a lid on for 60–120 minutes , until tender (depending on the cut and the pot).
6️⃣ Let it sit for 5–10 minutes before serving.
✅ Ready when the meat is easily cut with a fork and the sauce has thickened.
💡 Chef's Tip
• For a deeper flavor, add a pinch of cinnamon or allspice (civilized flavoring) at the end and a little bay leaf at the beginning.
• If you want an even more tender result: cook slowly over low heat and don't stir constantly .
