Semeni or helba or nutmeg is the seed of the fenugreek plant. It was first cultivated in the Near East and slowly began to be cultivated all over the world as well as being used in almost all cuisines.
In Turkish cuisine, where it is widely used, cemeni flavors pastourma as well as traditional pies. It is also a key ingredient in many sauces and marinades.
Its taste is relatively bitter, but this bitterness subsides once it is cooked.
Don't hesitate to use it on grilled vegetables, homemade vegetable pies, marinades, handmade pastourma and even bean salad! But in moderation, as its aroma is intense.
