A light, warm and flavorful meal.
The chicken is gently steamed, remaining juicy and combined with vegetables that retain their freshness. The lemony sauce ties all the ingredients together in a light dish.
Ingredients (for 4 people)
For the chicken & vegetables
- 800 g chicken fillet (breast or thigh, boneless)
- 2 carrots, cut into rings
- 1 broccoli, cut into small florets
- 1 zucchini, cut into thick slices
- 1 potato, thinly sliced
- Salt
- Freshly ground pepper
For the lemon sauce
- Juice of 2 lemons
- Zest of 1 lemon
- 4 tbsp olive oil
- 1 tsp mild mustard
- 1 clove garlic (optional, very finely chopped)
- 1 tsp honey (optional, for balance)
- Salt & pepper
Step-by-step execution
1️⃣ Chicken preparation
Cut the chicken into medium-sized portions.
Season lightly with salt and pepper and set aside until we prepare the vegetables.
2️⃣ Steam cooking
In a pot with a grill or steamer:
We add the potatoes and carrots first (they need a little more time).
After 5 minutes, add the chicken.
In the last 5 minutes, add the broccoli and zucchini.
Total steaming time: 20–25 minutes, until the chicken is well cooked but juicy.
3️⃣ Prepare the lemon sauce
In a bowl, mix:
- lemon juice and zest
- the olive oil
- the mustard
- garlic (if using)
- the honey
Season with salt and pepper and beat well with a fork until thickened.
4️⃣ We tie the food
Place the chicken and vegetables in a large bowl or platter.
Pour over the lemon sauce while they are still hot to absorb the flavor.
Serving
Serve hot, with:
- a little fresh pepper on top
- extra lemon for those who want it more intense
- optionally a little fresh parsley or dill
It is ideally accompanied with some wholemeal bread or rice.
Little secrets of success
- Steamed chicken doesn't dry out, as long as we don't overcook it.
- If we want a richer flavor, we can add a little chicken broth to the sauce.
- The mustard and honey shouldn't overpower, they just balance the lemon.
