The first and most important step is choosing good meat!

Use a thermometer ! The thermometer is very important to achieve the desired doneness inside the meat. Don't forget that even a small difference in the internal temperature can make a significant difference in the baking result.
Once the meat has been cooked, it is very important to let it "rest ". You must not forget that the meat, even if it has been removed from the grill, continues to cook thanks to the residual heat. So leave it for a while, as this will transfer the juices to the center and it will be perfectly juicy.
